有的餐廳,會只擺好一幅餐具,你吃完一道菜就撤一道餐具,更換另一道餐具。但更多的餐廳是擺好全套餐具。西餐餐具的擺放是正面放食盤(湯盤),左手放叉,右手放刀。食盤上放匙(湯匙或甜晶匙),再上方放酒杯。餐巾插在水杯內或擺在食盤上,麵包碟放在左上方。切記,你左上方的麵包碟是你的。對於品種繁多的西餐餐具,可能會束手無措。用哪一件餐具吃哪一道菜? 其實,總的原則就是遵循"從外到里"的次序,也就是說從最外面的刀叉開始用起。

塗麵包黃油時,應從麵包上掰下一塊,用刀抹些黃油再吃,而不是把整塊麵包一下子都抹上黃油。如果黃油不是每人一份,而是在桌子中央擺放了一碟,那就因應該用黃油刀挑起一點,放在自己的麵包色碟里,然後再從自己麵包碟里刮一點黃油抹麵包。千萬不要拿自己的黃油刀去刮公用碟里的黃油然後就往自己麵包上抹。

用刀叉吃東西時,應以叉子將左邊固定,用刀子切一小口大小,蘸上調味汁送入口中。而不要把食物在盤中全部都切成一塊塊的,然後叉著吃。

1.頭盤

2.湯

3.副菜
通常水產類菜餚與蛋類、麵包類、酥盒菜餚均稱為副菜。西餐吃魚類菜餚講究使用專用的調味汁,品種有韃靼汁、荷蘭汁、酒店汁、白奶油汁、大主教汁、美國汁和水手魚汁等。
4.主菜
肉、禽類菜餚是主菜。其中最有代表性的是牛肉或牛排,肉類菜餚配用的調味計主要有西班牙汁、濃燒汁精、蘑菇汁、白尼絲汁等。禽類菜餚的原料取自雞。鴨、鵝;
禽類菜餚最多的是雞,可煮、可炸、可烤、可炯,主要的調味汁有咖喱、奶油汁等。
5.蔬菜類菜餚
可以安排在肉類菜餚之後,也可以與肉類菜餚同時上桌,蔬菜類菜餚在西餐中稱為沙拉。與主菜同時搭配的沙拉,稱為生蔬菜沙拉,一般用生菜、番茄、黃瓜、蘆筍等製作。還有一類是用魚、肉、蛋類製作的,一般不加味汁。
6.甜品
西餐的甜品是主菜後食用的,可以算作是第六道菜。從真正意義上講,它包括所有主菜後的食物,如布丁、冰淇淋、乳酪、水果等等。
